Healthy Egg Salad Sandwich



1. Boil your eggs
2. You can do 2 whole eggs and one egg white or if you want to lower the fat content then you can do 2-3 egg whites and one whole egg.
3. Add two tbsp of 100% olive oil hummus:




4. Take a fork and mash up the eggs and hummus in a bowl
5. Toast one piece of 100% whole wheat bread for an open faced sandwich or use a whole grain sandwich thin or pita
6. Add veggies (I like spinach and tomato)
7. Add a little pepper if you want and enjoy!

By not using mayo you are incorporating healthier fat and by using less egg yolk you are increasing the protein content. This sandwich will keep you full and satisfied and its packed with good nutrients!
