Summer Salads

Summer is the best because of the warm weather and all the ripe fruit available! This is when a big fresh salad is perfect for lunch or for dinner. Light and refreshing!!!

The biggest problem is the dressing... why would you make this big healthy salad and then pour a ton of fattening salad dressing all over it. You think you are doing something good for yourself by making a salad but the calories match a bacon cheese burger- Not right.

Here are some ways to dress up your salad and keep it healthy!


I made this salad for my family the other night and it was amazing.

Ingredients
Mixed greens
Kiwi
Strawberries
Blueberries
Walnuts
Blue cheese Crumbles

Dressing
Extra virgin olive oil
Agave Nectar
1/2 lemon

Take a bowl and do two tablespoons extra virgin olive oil for ever one tbsp Agave. Take half of a lemon and squeeze it in. Take a whisk or fork and mix it up well. If you are just making a salad for yourself you will only use 1/3 of this and save the rest for later. For this family size salad I used twice this.

What is Agave Nectar?


Agave is an all natural sweetener. Its has the consistency of honey but it has a different taste. Its great, but it does have 60 calories per tablespoon and 10-15 grams of sugar depending on the brand so don't go too crazy with it.


You can add many different things to salads to make them yummy and not boring.


Try:

1. Nuts- Sunflower seeds, almonds, pecans, almonds, ect
2. Fruit- Kiwi, pears, mandarin oranges (the juice works well as a dressing too with a little oil), raspberries, black berries, blueberries
- I have been using pomegranate seeds- These are greet to give your salad a little crunch


3. Lost of veggies- peppers, onions, tomatoes, ect
**Love avocado!
4. Add some beans or corn and make it a southwest style salad
5. Make your own dressing

1 tsp Dijon mustard
1 tbsp red wine vinegar
3 tbsp extra virgin olive oil

-or-

1 tbsp fresh lemon juice
3 tbsp olive oil

Whisk and add salt and pepper to taste

Walnuts
Blue cheese crumbles

Try one of the dressings suggested or try Amys organic light vinaigrette dressing.

Greek salad
Mixed greens
Tomatoes
Onion
Olives (love olives!)
Feta cheese
Artichokes
-Olive oil and vinegar
