I always loved chicken salad growing up but sometimes I get it and I can taste the mayo loaded into it. I can almost feel my legs start to giggle because of it- ewww
So here is a way to make it at home but with a healthy twist.
First start with the chicken. I know people normally boil it but I don't have the time to stand around and wait for it to finish. So I throw it in the crock pot, cover it with water and put it on low for four hours. Come back and its ready to go (if I put it in the crock pot it the morning then its ready by lunch).
When the chicken is done I cut it up into cubes. Then I add celery, dried cranberries and grapes chopped up.
So obviously if you have been following my blog you should know whats next- Greek yogurt. Depending on how much chicken you have and extra stuff you can add as much or as little as you want.
I will make this and it will last me a couple of days. I will eat it plain or on a sandwich thin. Great lunch option for those on the go!
