Chicken Pesto



Super easy recipe- grill chicken and make pesto and your done!

I don't have a food processor so I bought a super cheap foot cutter (does the exact same thing) and used that.

Pesto Sauce:

Combine in a food processor 2 - 3 cups of washed basil leaves, 2 cloves of garlic, 1/4 cup pine (pignoli) nuts, 1/2 cup of Parmesan cheese,1 teaspoon of salt and 1/2 teaspoon of pepper. Pulse until it becomes a fine and homogenous mixture, almost a paste. Take a spatula and scrape the sides. With the food processor running slowly add 3/4 to 1 cup of extra virgin olive oil until it reaches your desired consistency. Season to taste.





Then mix all together- I used whole grain pasta and I took it for lunch all week. It is one of my favorites.

Want to boost your Omega-3's??

Add walnuts- 1 1/2 cups walnuts
OR walnut oil-1/2 cup walnut oil
OR add both. Sub extra virgin olive oil and add walnut instead- or do an even mixture.

Try my Raw Walnut Pesto:




RAW WALNUT PESTO


2 handfuls of Fresh Basil
1/4 or 1/2 cup Extra Virgin Olive Oil
1 tsp minced garlic
Juice from 1/2 of a lemon
1 Cup of Raw Walnuts
Sea Salt & Pepper to taste

I also add a sprinkle of Parmesan cheese.
