Butternut Squash Protein Pudding

I've been hearing about Xanthan Gum and its magical properties for a while now.
So I finally went out and bought some a few weeks ago.

WHAT A DECISION.

For those of you who don't know, xanthan gum is a gluten free ingredient that prevents separation of ingredients; it's often used in dressings, ice-cream (along with other emulsifiers) and even doughs.

I've been using it to thicken smoothies and make protein pudding. That's right, PROTEIN PUDDING :D

Butternut Squash Protein Pudding
You'll need:
1/2 cup mashed/pureed butternut squash
85g plain greek yoghurt (I used half of one of Chobani's mini tubs)
a handful of ice cubs (remember I've got big hands!)
1/4 tsp cinnamon
1 scoop of protein (I used half whey and half casein)
1/2 tsp xanthan gum

Method:
Combine all ingredients with a blender, adding the xanthan gum last.
Its really that easy.
Eat it quick though! It will still go liquidy with time.

I topped mine with some sunflower seeds for some crunch ;)

Calories- 218
Carbohydrates- 21g
Protein- 33g
Fat- 2g
