Cauliflower and Zucchini Pizza Crust

Okay so it’s not the Butternut Squash and Cauliflower Crust I’ve been promising, but I do promise you won’t be disappointed.

Cauliflower and Zucchini Pizza Crust
You’ll need:
1 cup cauliflower rice
3/4 cup grated zucchini
15g chickpea flour
1 egg white


Method:
1- Preheat oven to 230’C
2- Mix cauliflower rice and zucchini, microwave for 1 minute and then squeeze with paper towel to drain liquid
3- Mix all ingredients well
4- Plop mixture onto a sprayed baking tray and shape into a crust using a spoon
5- Bake for 25 minutes and reduce oven to 200’C. While to oven heat is reducing, add your toppings (any meats should be precooked)

6- Put back in the oven (or under the grill!) for 10-15 minutes, or until your liking

This won’t be the world’s crunchiest crust and it’ll probably flop under the weight of your toppings if you try to hold a piece (I usually eat my pizza with a knife and fork…no judging!)
I topped mine with extra lean ground turkey, mexican beans and no-sodium salsa – better than any meatlovers from Domino’s ;)
