Chicken Piquant

Piquant = Tomato based sauce, in case you were wondering :) (I was at first!)

Chicken Piquant
You'll need:
10g onion, chopped
100g chcken breast, diced
50g green beans, cut into small lengths
1 medium carrot
1/4 of a capsicum (I used a bit of yellow and red)
30g celery, chopped
Half a large tomato, peeled and chopped
1 tbsp no-salt tomato paste
1/2 clove garlic
1 tbsp parsley (or basil would go nicely, but I was all out!)
1/2 a vegetable stock cube, crumbled
1/4 cup water
1/2-1 teaspoon cornflour

Method:
1- Preheat oven to 170'C
2- In an oven proof dish, stir all ingredients except cornflour
3- Cover and bake for 30mins
4- Add cornflour and stir through. Bake uncovered for 10+ minutes, until the sauce has thickened a bit

Its really that easy. And TASTY! :D
