HOWEVER there is one exception to this: The glorious red wine sauce in my Clean Chicken Stroganoff.
Clean Chicken Stroganoff
You'll need:
2 tbsp chopped onion
100g sliced mushrooms
2 tsp minced garlic
100g chicken breast, diced
1 medium carrot, sliced
80g green beans, cut bitesized
1/2 tsp paprika
salt and pepper to taste
2 tbsp almond milk
1 tbsp tomato paste
1 tbsp red wine
6 tbsp water, divided
Method:
1- Heat pan, spray and onion. Saute for a few minutes, then add mushroom and garlic, sauteeing for a further few minutes.
2- Add the chicken, carrot, beans, paprika, salt and pepper to taste, sautee for another few minutes.
3- Add 3tbsp water, bring to the boil, turn to low and cover to simmer for 10 minutes.
4- Combine almond milk, tomato paste, red wine and remaining 3tbsp water. Add to mixture and continue to cook (stirring occasionally), until the liquid is reduced.
Makes one serving, definitely NOT to be shared.
