Clean Shepherds Pie for One!

I was looking for Christmas recipes to revamp and came across this classic and of course my foodie brain started spinning out of control - how can I make this classic clean?!

Clean Shepherds Pie
You'll need:
100g extra lean ground turkey

1/3 cup zucchini, sliced
1/2 a medium carrot, peeled and sliced
65g corn kernels
125g diced tomatoes (from the can)
200g cauliflower
1/2 tsp garlic, crushed
2 tbsp almond milk

Method:
1- Preheat oven to 175'C
2- Brown your turkey over medium heat and add desired seasonings (I used black pepper, paprika and thyme)
3- Mix browned turkey, zucchini, carrot, corn and tomatoes in a bowl and put aside
4- Steam cauliflower and then squeeze with paper towel to get rid of any excess liquid
5- With a hand blender or processor, puree cauliflower with garlic and almond milk
6- Pour turkey/veg mix into the bottom of a sprayed oven-safe dish. Cover with cauliflower/garlic puree
7- Cover with foil and bake for 20 minutes, then uncover and bake for a further 5-10 minutes. And you're done! :)

Carbohydrates- 21g
Protein- 28g
Fat- 11g

Straight out of the oven...
And served! (with some added awesome-Instagrammy-filter)

The top of this won't go crisp and brown like the potato on a classic pie but that doesn't detract from its deliciousness. Definitely my new go-to comfort food!
