Mixed Nuts and Seeds Bread (Low-carb)
You'll need:
1 cup, 64g Almond meal
4 tbs Flax Seed Meal
1/3 cup Mixed Nuts, dry roasted or raw, chopped
10g Pumpkin Seeds
1 tbsp Poppy seeds
1.5 tbsp Applesauce, unsweetened
1/2 tsp Baking Powder
3 Eggs
1 tbsp Apple Cider Vinegar


Method:
1-Preheat oven to 180'C
2-Combine dry ingredients in a bowl
3-In a larger bowl, blend eggs 3-5mins until frothy, then add apple cider vinegar and applesauce
4-Mix dry ingredients into wet, then add nuts and seeds
5-Pour batter into a sprayed and lined loaf pan
6- Bake for 30-35 mins, or until an inserted toothpick comes out clean

Nutritionals (per 1/10 slices)

Calories- 110
Carbohydrates- 1.5g
Protein- 4.8g
Fat- 8.8g (all healthy fats though!)

Warning: this bread isnt sweet, like at all. Not that this detracts from its nutty yumminess, but if you have a sweet tooth you'll want to consider adding sweetener, brown sugar, honey, maple syrup, agave, or using sweetened applesauce. Bear in mind this will change the nutritionals, but its up to you!
