Sweet Potato, Coconut and Chia Seed Protein Bites

I've had an overwhelming amount of request for these little buggers, so here we go!

Sweet Potato, Coconut and Chia Seed Protein Bites

1/2 cup baked and pureed sweet potato
1/2 cup liquid egg whites
1/4 cup light coconut milk
1 scoop whey protein, I use vanilla
4 tbsp coconut flour
1/4 cup oats
2 tbsp chia seeds
1 tsp
vanilla extract
1/2 tsp baking powder


Directions
1- Preheat oven to 150'C
2- Blend wet ingredients in one bowl and combine dry ingredients (except chia seeds) in another. 

3- Blend wet and dry ingredients, lastly adding and blending in the chia seeds. Let the mixture sit for 15+ minutes before pour into a sprayed mini cupcake pan.
4- Bake for approx. 30 minutes.

Now these don't bake to the texture of regular muffins, they maintain a dense, almost mushy texture due to the sweet potato. However, this does not detract from their awesomeness.
