For the pancakes:
1 scoop chocolate whey protein
20g oat flour
1/4 tsp baking powder
2 egg whites
1 tbsp pumpkin puree
2 tbsp almond milk
For the 'fluff':
1/2 a scoop casein of choice (I used cookies'n'creme)
1/4 cup frozen blueberries
Method:
1- Mix dry pancake ingredients and wet pancake ingredients separately, then mix them together
2- Cook like regular pancakes
For the fluff:
3- Put the casein in a mixing bowl with enough water to make it into a thick goo (about 2 tbsp)
4- Put in the fridge for at least 10 minutes
5- Take it out of the fridge, and in the same bowl use a hand mixer to puree the blueberries and incorporate them into the casein mix
6- Then using an electric whisk, whisk on high until the mixture fluffs up (like egg whites would)
Serve you pancakes with the protein fluff and you're done! :D
